# Directions:
01 - In a large bowl, whisk ricotta, milk, egg yolks, vanilla extract, and melted butter until smooth.
02 - In a separate bowl, whisk together flour, sugar, baking powder, and salt.
03 - Add the dry ingredients to the wet mixture and stir until just combined, allowing for a few lumps.
04 - Beat egg whites in a clean bowl until soft peaks form, then gently fold them into the batter using a spatula, taking care not to deflate the mixture.
05 - Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
06 - Pour 1/4 cup of batter per pancake onto the skillet. Cook for 2–3 minutes until bubbles form and edges set, then flip and cook an additional 1–2 minutes until golden and cooked through.
07 - Serve pancakes warm topped with maple syrup, fresh berries, or a dusting of powdered sugar.
