# Directions:
01 - Preheat oven to 350°F. Grease and line a 9x5-inch loaf pan with parchment paper.
02 - Pierce the sweet potato with a fork; roast at 400°F until tender, about 45 minutes. Cool, peel, and mash until smooth.
03 - In a large bowl, whisk mashed sweet potato, eggs, oil or melted butter, buttermilk, brown sugar, maple syrup, and vanilla until fully incorporated.
04 - In a separate bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves together.
05 - Gently fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
06 - Fold in toasted pecans and optional dried fruit evenly into the batter.
07 - Pour batter into prepared loaf pan, smooth surface, and sprinkle with extra pecans if desired.
08 - Bake for 50 to 55 minutes, or until a toothpick inserted centrally comes out clean.
