Watching the joy on my loved ones' faces when they discovered how light and satisfying the cloud bread was felt like pure magic. That night, I realized that healthy can indeed be fun and delicious.

I'll never forget the first time I served these tacos at a casual dinner party. Instructions

Prepare Cloud Bread:
Start by preheating your oven; the kitchen will soon smell amazing. Beat the egg whites until they form stiff peaks, something I learned makes all the difference for fluffiness.
Combine Ingredients:
Mix the cream cheese with egg yolks until smooth, and fold in the egg whites gently to keep the mixture airy.
Shape and Bake:
Spoon the batter onto the baking sheet, imagining the tacos they will become. Bake until they're lightly golden, but don’t rush this—let them cool before peeling!
Cook the Beef:
Sauté the onions and garlic, then add the beef; make sure to break it up for a good sear. Stir in the spices like you're sharing secret flavors, and don’t forget to simmer so they meld perfectly.
Assemble and Enjoy:
Fill each light shell with the cherishing seasoned beef, decorate with vibrant toppings, and serve them warm. The joy in everyone's eyes when they take that first bite is priceless!

These tacos became a regular feature in my home, especially when I wanted to impress guests with a delightful twist on a familiar dish. Over time, I found that my kids loved being involved in the cooking, especially the assembly part where they could pick their toppings. It turned dinner into a fun activity rather than a chore, creating a shared experience around the table that was about more than just food.

Making It Your Own

Feel free to experiment with your favorite proteins, whether it's ground turkey or even a plant-based option. Adding a splash of lime juice over the toppings adds a refreshing zing that can brighten up the flavors beautifully.

Tips for Perfect Tacos

Keep an eye on the baking time of your cloud bread; too long can lead to crispiness where fluffiness is desired.

  • Consider adding avocado or a sprinkle of your favorite hot sauce for an unexpected flavor kick.
  • If using a different protein, adjust cooking times accordingly to ensure everything remains juicy.
  • Always have fun with it; the process is just as enjoyable as the meal itself!

What You’ll Need

Cloud Bread Taco Shells

01 4 large eggs, separated
02 100 g about ½ cup cream cheese, softened
03 ¼ tsp cream of tartar
04 ¼ tsp salt

Seasoned Beef Filling

01 450 g 1 lb ground beef
02 1 small onion, finely chopped
03 2 cloves garlic, minced
04 1 tbsp olive oil
05 2 tsp chili powder
06 1 tsp ground cumin
07 ½ tsp smoked paprika
08 ½ tsp dried oregano
09 ½ tsp salt
10 ¼ tsp black pepper
11 80 ml ⅓ cup water

Toppings

01 1 cup shredded lettuce
02 1 medium tomato, diced
03 ½ cup shredded cheddar cheese
04 ¼ cup sour cream
05 Fresh cilantro leaves, for garnish

Directions

Step 01

Prepare the oven and baking sheet: Preheat the oven to 150°C 300°F and line a baking sheet with parchment paper for the cloud bread tacos.

Step 02

Beat egg whites: In a clean bowl, beat the egg whites and cream of tartar together until stiff peaks form.

Step 03

Mix yolks and cream cheese: In another bowl, mix the yolks, cream cheese, and salt until smooth.

Step 04

Fold egg whites into yolk mixture: Gently fold the egg whites into the yolk mixture in thirds, taking care not to deflate the whites.

Step 05

Shape and bake cloud bread shells: Spoon 8 rounds of batter onto the prepared sheet, shaping each into a circle about 12 cm 5 in wide. Bake for 18–20 minutes, until set and lightly golden. Let cool before carefully peeling off the parchment.

Step 06

Cook beef filling: While the cloud breads bake, heat olive oil in a skillet over medium heat. Add onions and sauté 2 minutes. Add garlic and ground beef; cook until beef is browned, breaking up lumps. Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook 1 minute. Add water, reduce heat, and simmer until the mixture thickens 5 minutes. Remove from heat.

Step 07

Assemble tacos: Place beef filling in each cloud bread shell, then top with lettuce, tomato, cheese, sour cream, and cilantro.
